Sourdough Starter for an Artisan Bread recipe
Description
Unless you buy sourdough in an artisan bakery, what we find in the supermarket is not really sourdough. It’s most likely a regular bread with added acid flavour and a little bit of starter.
Ingredients
- Water.
- Flour.
Instructions
- The starter takes 7-9 days to be ready and it’s simple to make. It only needs water and flour, stir, cover and feed the same way until the dough ready and full of bubbles. It can live in your fridge until you need it.
- A bacteria called lactobacillus is formed during this fermentation and the lactic acid is what gives that tangy rich flavour that many love.
- There is very little research about sourdough fermentation but it seems to help lower blood sugar spikes levels in some people. The fermentation helps to break down the fructans, making them easier to digest and also increase the availability of some nutrients like zinc.
- Although regular sourdough bread has gluten, some people swear it does not bother them when consumed, as yeast bread does.
Notes
Gluten-Free sourdough is also possible, just find the right mix of gluten-free flours and starches.
