Banana oat pancakes no egg vegan

Description

I love pancakes, and they are my Sunday treat. This recipe is quick, easy and delicious. I serve them with blueberries and a little maple syrup.


Ingredients

Scale
  • 2 Cup oats-process into flour.
  • 1 Large ripe banana.
  • 1 Tin coconut milk.
  • 1 Tsp baking power.
  • 1/2 Tsp salt.
  • Juice of 1/2 lemon.

Instructions

  • Once you processed the oats into flour, mix in the banana and coconut milk and blend well. Add salt, baking powder and lemon juice and blend. Let rest 5 min.
  • Preheat a non-stick pan over medium heat. Add a little coconut oil and pour the batter slowly. Cook each pancake for 2-3 minutes on each side until golden brown.
  • Serve warm with your favourite toppings.
