Salad dressing with sauerkraut and apple vinegar

When I suggest making a “salad,” I refer to all kinds of greens. I mean, arugula, Boston, green leaf lettuce, red leaf lettuce, romaine, escarole, radicchio, spinach, kale, watercress and of course my favourite broccoli sprouts. All these leaves are full of minerals and vitamins.

Salad dressing with sauerkraut and apple vinegar

Ingredients

Lettuce: green leaf, red leaf, romaine, watercress, arugula, Boston, spinach, kale, broccoli sprouts…

Fruits: tomato, berries, pomegranate,  apple, pear, fresh figs…

Veggies: cucumber, bell peppers, radishes, carrots, asparagus,  

Fats: olives, avocado, EVOO, seeds ( hemp, pumpkin, sunflower, sesame…) nuts ( walnuts, pecans…).

Flavours: Vinegar (organic apple cider vinegar), dijon mustard, miso paste, citrus juices…

Other: dry fruits (cranberries, figs…).

SAUERKRAUT (naturally fermented cabbage). 


Instructions

When I suggest making a “salad,” I refer to all kinds of greens. I mean, arugula, Boston, green leaf lettuce, red leaf lettuce, romaine, escarole, radicchio, spinach, kale, watercress and of course my favourite broccoli sprouts. All these leaves are full of minerals and vitamins.

After the green is when the fun begins, you can choose from all the rainbow colours: tomatoes, berries, oranges or grapefruit, cucumber, apples, pears, pomegranates, radishes, carrots, the list is endless of more vitamins and minerals and smart carbs.

Then you add healthy fats like avocado, olives, nuts and seeds also packed with proteins. You can also choose some dry fruits (no sugar added) figs and cranberries. 

Top your salad with some EVOO (organic Extra Virgin Olive Oil) and some vinegar like organic apple cider vinegar or citrus juices like lemon. Other options are dijon mustard, miso paste, crushed garlic and or some dry herbs like oregano, basil, parsley, cilantro.  

Last but most important of all is sauerkraut. We are talking about fibre and prebiotics and probiotics, of the top foods that will feed your gut.
